Best vegetable soup recipe

This vegetable soup is super easy and quick to make. It is also very versatile meaning you can add or subtract any ingredients you want.
It is ridiculously creamy you will think there was cream added.
The necessary ingredients needed are
  • Onions (or shallots or spring onions or leeks)
  • Potato
  • Carrots
  • Courgettes
You can add any of the following vegetables for a more layered flavour
  • Cabbage (White)
  • Celery
  • Sweet potato
  • Pumpkin
  • Turnips
  • Peas

I will describe how I make my personal favourite combination; you can add whatever vegetables tickle your fancy.

Ingredients
  1. 150g diced spring onions or leek (around 3 large sprigs of spring onions or the root of one leek)
  2. 200g (around 3 large carrots)
  3. 1 large potato
  4. 200g of courgettes (around 3 large courgettes)
  5. 150g white cabbage
  6. 200ml bone broth or water
  7. Salt and pepper to taste.
Instructions
  1. 1. Peel and dice all your vegetables and put into separate plates.
  2. 2. Begin by sautéing onions/leeks and diced carrots until translucent for at least five minutes.
  3. 3. Add cabbage and courgettes and sauté for another three minutes
  4. 4. Add potatoes and sauté for a few minutes until the vegetables begin to form a glaze at the bottom of the pan.
  5. 5. Add bone broth or water until all the vegetables are immersed and there is around one inch of liquid above the vegetables.
  6. 6. Bring to a boil and then reduce to a simmer for around twenty minutes (until the vegetables are soft)
  7. 7. Turn off heat and blend with a hand held blender or blender. Flavour with salt and pepper.
Notes
  1. •The courgettes are what give this soup a creamy taste and consistency. Make sure they are ripe and well peeled or else they tend to give off a bitter flavour.
  2. •Sautéing the vegetables makes it more aromatic and releases the flavours so it is an important step.
