This muffin is super easy and depending if you use protein powder and Greek yogurt, it can be very high in protein too.

Ingredients
  1. 150g/1 ¼ cup oat flour
  2. (for higher protein use 120g/1 cup oat flour and 25g vanilla or unflavoured protein powder)
  3. 45g/ ¼ cup sugar or sugar alternative
  4. ½ tbsp baking powder and a pinch of salt
  5. 2 large lemons zested and the juice of 1 lemon
  6. 125ml/ ½ cup of your milk of choice
  7. 65ml/ ¼ cup of oil (coconut or vegetable oil is fine)
  8. 1 egg and ½ tsp pf vanilla
  9. Icing
  10. Greek yogurt and 25g white hot chocolate powder.
Instructions
  1. 1. Preheat oven to 170 degrees. Add all dry ingredients in one bowl and wet ingredients in a separate bowl.
  2. 2. Mix wet and dry ingredients together before putting into lined muffin tins.
  3. 3. Bake for twenty minutes, or until just cooked.
  4. 4. Allow to cool and add topping of choice.
Notes
  1. • If you can’t find white hot chocolate powder you can substitute with you a sweetener or a sweet drink powder of choice.
  2. • Alternatively, you can make your own zesty chia jam and spread on top or enjoy as is.
  3. • I once used melted butterscotch chocolate chips with Greek yogurt and it worked a treat.
  4. • I like oat flour because it is gluten free and oat flour gives a lovely moist and dense texture. If you like your muffins on the crumbly side you can use half white flour and half oat. Feel free to experiment.
