No Bake Coconut Fudge Bars
These are a real treat, tasty full of healthy fats and enough to satisfy those sweet-tooth cravings.
Best thing about them, they are super easy and quick to make. No bake desserts are my favourite since I am not very skilled in the baking department.

Ingredients
- 240g/3 cups pf shredded coconut
- 50g/¼ cup honey/maple syrup/agave
- 96g/½ cup melted coconut oil
- ½ tsp vanilla extract or essence
- ¼ tsp salt
- 1 ½ cup chocolate chips or dark chocolate or chocolate of choice
- 1/3 cup almond butter or nut butter of choice.
Instructions
- 1. Line 8x8 inch pan with baking sheets, making sure to go up the sides.
- 2. Combine coconut, honey, melted coconut oil, vanilla and salt.
- 3. Mix well if still crumbly add a little bit more melted coconut oil.
- 4. Spread 2/3 of mix into pan and press firmly down.
- 5. Melt chocolate and add nut butter. Carefully spread on top of coconut in pan.
- 6. Add remaining coconut mix on top and press down.
- 7. Cover and refrigerate until firm (1-2 hours)
- 8. When firm you can cut them in square bars and serve. Enjoy.
Notes
- Leftovers can be stored in fridge or freezer.
- If weather is hot always store in fridge.
