Sticky Chinese Cauliflower

This is one of my favourite recipes, it is super quick to make and is finished by the time you make noodles or steamed rice and salad to accompany it.
Cauliflower has heaps of benefits, low in fat and calories and high in vitamin C, manganese, potassium and a decent amount of iron.
However, I have never really liked the taste of cauliflower. I tried cauliflower rice and cauliflower pizza crust but didn’t truly enjoyed it. This however was very tasty. The sauce is incredible and uplifts the whole dish.

Ingredients
  1. • I small head of cauliflower cut into florets
  2. • 1/3 cup low sodium soy sauce (or substitute water and Worcestershire sauce in the ratio of 2:1)
  3. • ¼ cup honey, maple syrup or agave
  4. • ¼ cup rice vinegar
  5. • 1 tbsp minced garlic
  6. • ½ tsp powdered or freshly grated ginger
  7. • 1 tbsp Sesame oil
  8. • 1 ½ tbsp cornstarch
  9. • ¼ cup water
  10. • Roast sesame seeds for garnish (lemongrass or scallions also if available)
Instructions
  1. 1. Preheat oven to 220C/450F. in a grease or parchment lined baking tray put cauliflower florets in oven. When cutting florets try to make flat so they are easier to line.
  2. 2. Meanwhile whisk soy sauce, honey, vinegar, garlic, sesame oil and ginger in a saucepan. When it comes to a boil whisk in cornstarch and water mix until fully dissolved. Reduce heat and continually stir until thickens. Leave aside, note that sauce usually thickens a bit after cooling.
  3. 3. After 10 minutes turn cauliflower florets on other side and bake for another 10 minutes. You can grill or turn heat on high for a further 3 minutes to get a slight crisp.
  4. 4. Pour sauce on top of cauliflowers and sprinkle with roasted sesame seeds and scallions. Perfectly paired with steamed rice or noodles.
